I bridge the gap between food science and human physiology. Most people know me for eating snack cakes for two months to illustrate that calories dictate weight loss more than "clean eating" does (the Twinkie Diet). While that experiment went viral, my actual work is about the boring, vital details of how your body handles what you put in it.

 

I run clinical trials to see if an ingredient actually works before it hits the shelf and teach courses that pertain to diet, nutrition, aging, or sports. After a professional detour to serve the university in an administrative role (10 years) and time to get through brain cancer surgery and treatments from 2021 - 2024, I'm grateful to be back in the lab investigating the "Eating - Health Axis".
