"Food is Medicine" has been the focus of my clinical research since I joined Kansas State University in 2000. My lab studies how specific foods and dietary supplements affect metabolism, appetite, skin cancer risk, and gut health—work that helped the FDA update its definition of dietary fibers. Current collaborations with the College of Agriculture aim to bridge the "agriculture-health gap," including supporting Dr. Rice's regenerative agriculture research on nutrient-dense crops.

 

The two areas that drive most of research efforts are dietary supplements and natural products (crop and plant derivatives) on APPETITE and/or SKIN HEALTH. Our appetite research aims to identify functional ingredients to facilitate healthy diet choices.  Our skin health focus is on how diet  reduces the risks of UV damage to slow the onset of skin cancers and/or the "appearance of aging"
